Hariharalaya Mushroom Barley Soup

1/2 C Pearl Barley, raw
6 C Water
2-3 Garlic, cloves
1 lg Carrot, chopped
1 lg Onion, chopped
2 Celery, chopped
1 C Spinach, chopped
1 lb Mushroom (Oyster, Shiitake, White)
3 T Tamari or Soy Sauce
4 T Balsamic Vinegar
2 T Oil (Sunflower, Safflower, Rice Bran, etc)
Salt and Pepper to taste

1. Cook barley in 1 1/2 C water until soft
2. Add remaining water, tamari and vinegar
3. In separate pan, saute onion and garlic in oil for 3 minutes with salt
4. Add celery and carrot and continue to cook for 2 minutes
5. Add mushrooms and cook for 5+ minutes
6. Mix cooked vegetables and raw spinach in with barley and liquid and
simmer for 15 minutes
7. Season with black pepper and salt. Adjust flavors.
